  • 1/4 tsp nutmeg
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • Crusty bread, for serving

Instructions

  1. In a pot, melt butter with olive oil over medium heat.
  2. Add garlic and onion, sauté for 3-4 minutes until fragrant and softened.
  3. Sprinkle in flour, stir, and cook for 1 minute to form a roux.
  4. Gradually whisk in broth until smooth and bring to a gentle simmer.
  5. Stir in heavy cream, nutmeg, salt, and black pepper.
  6. Simmer for 5 minutes until thickened and creamy.
  7. Blend with an immersion blender for a smoother texture, if desired.
  8. Garnish with parsley and serve hot with crusty bread.

Notes

For a lighter version, substitute half-and-half for heavy cream. Roasting the garlic beforehand will add a deeper flavor.
