- Fresh parsley, chopped (for garnish)
- Crusty bread, for serving
Instructions
- In a pot, melt butter with olive oil over medium heat.
- Add garlic and onion, sauté for 3-4 minutes until fragrant and softened.
- Sprinkle in flour, stir, and cook for 1 minute to form a roux.
- Gradually whisk in broth until smooth and bring to a gentle simmer.
- Stir in heavy cream, nutmeg, salt, and black pepper.
- Simmer for 5 minutes until thickened and creamy.
- Blend with an immersion blender for a smoother texture, if desired.
- Garnish with parsley and serve hot with crusty bread.
Notes
For a lighter version, substitute half-and-half for heavy cream. Roasting the garlic beforehand will add a deeper flavor.
