Festive, soft, and delicious whoopie pies made with cake mix and patriotic colors – perfect for your 4th of July celebration!

- 1 box French Vanilla Cake Mix
- 8 tablespoons (1 stick) butter, melted
- 2 eggs
- 1 teaspoon vanilla extract
- Several drops red gel food coloring
- Several drops blue gel food coloring
- 3 cups (340g) powdered sugar
- 1/3 cup (75g) softened butter
- 1 1/2 teaspoons vanilla extract
- 2 tablespoons (30 ml) milk or heavy cream
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, mix cake mix, melted butter, eggs, and vanilla extract until a dough forms.
- Divide dough evenly into two bowls. Color one with red food coloring, and the other with blue.
- Scoop small rounds of each color onto the baking sheet, spacing them well apart.
- Bake for 8-10 minutes until edges are set. Let cool completely.
- For the filling, beat powdered sugar, softened butter, vanilla extract, and milk/heavy cream until fluffy.
- Spread or pipe filling on the flat side of one cookie and sandwich with another.
- Serve immediately or chill slightly for firmer texture.
Notes
You can roll the edges in sprinkles for extra flair. Store in an airtight container in the fridge for up to 3 days.
