Festive no-bake cheesecake bars with a crispy marshmallow base and a fruity topping – perfect for your 4th of July celebration!

- 3 tablespoons unsalted butter
- 5 ounces mini marshmallows
- 2 teaspoons honey
- 1/2 teaspoon pure vanilla extract
- Kosher salt
- 4 cups crispy rice cereal
- One 1/4-ounce packet unflavored powdered gelatin
- Two 8-ounce packages cream cheese, at room temperature
- 1 cup sour cream
- 1 cup confectioners’ sugar
- 1 tablespoon fresh lemon juice
- 1/2 teaspoon pure vanilla extract
- Kosher salt
- 2 cups mixed raspberries and blueberries, for topping
Instructions
- Coat a 9×13-inch baking dish with cooking spray.
- In a large saucepan, melt the butter over medium heat.
- Add the marshmallows, honey, vanilla extract, and a pinch of kosher salt. Stir until completely melted and smooth.
- Remove from heat and stir in the crispy rice cereal until fully combined.
- Press the mixture evenly into the prepared dish. Let cool.
- In a small bowl, sprinkle gelatin over 2 tablespoons of water and let bloom for 5 minutes.
- In a large bowl, beat the cream cheese, sour cream, confectioners’ sugar, lemon juice, vanilla extract, and a pinch of kosher salt until smooth and fluffy.
- Microwave the gelatin for about 10 seconds to dissolve, then stir it into the cheesecake mixture.
- Spread the cheesecake layer over the cooled crispy base and smooth the top.
- Top with raspberries and blueberries.
- Refrigerate for at least 4 hours or until set before slicing into bars.
Notes
For clean slices, use a sharp knife dipped in hot water. Bars can be made a day ahead and kept refrigerated.
