- 9 Tablespoons salted butter, softened to room temperature
- ¾ cup granulated sugar
- 1 ½ Tablespoons granulated sugar (for egg whites)
- ¼ cup white chocolate
- 1 teaspoon baking powder
- ¼ teaspoon baking soda
- 2 cups all-purpose flour, sifted
- 1 cup milk
- 1 Tablespoon milk
- 1 teaspoon vanilla extract
- 3 egg whites
- 5 ½ cups powdered sugar, sifted
- 2 cups salted butter, softened to room temperature
- 1 teaspoon vanilla extract
- 2 Tablespoons heavy whipping cream
- Red food coloring
- Blue food coloring
Instructions
- Preheat oven to 350°F (175°C) and line a cupcake tray with liners.
- Cream the butter and sugar together until light and fluffy.
- Melt white chocolate and let cool slightly, then mix into the butter mixture.
- Whisk together flour, baking powder, and baking soda.
- Add dry ingredients alternately with milk to the butter mixture.
- Stir in vanilla extract.
- In a separate bowl, beat egg whites until soft peaks form, gradually adding 1 ½ tablespoons sugar.
- Gently fold egg whites into the batter.
- Divide batter into cupcake liners and bake for 18–22 minutes or until a toothpick comes out clean.
- For the buttercream, beat the softened butter until creamy.
- Gradually add sifted powdered sugar.
- Add vanilla extract and heavy whipping cream, beating until light and fluffy.
- Divide the buttercream into three portions; leave one plain, and color the others red and blue.
- Use a piping bag to swirl all three colors onto cooled cupcakes.
Notes
Make sure cupcakes are completely cooled before frosting for best results.
