Ingredients
- 2 tbsp fresh ginger, finely grated
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp honey or maple syrup
- 1 tbsp sesame oil
- 1 clove garlic, finely minced
- 2 tbsp water
- 1 tsp chili oil (optional)
- 1 tsp sesame seeds (optional)
Instructions
- Peel and finely grate the fresh ginger.
- In a small bowl, add soy sauce, rice vinegar, honey, and sesame oil.
- Add the grated ginger and minced garlic.
- Pour in the water and chili oil if using.
- Whisk everything together until fully combined and smooth.
- Taste and adjust sweetness, salt, or acidity as needed.

Notes
For a smoother sauce, blend all ingredients for 20 seconds. Add more honey for a sweeter version or more vinegar for extra tang. Store in an airtight jar in the fridge for up to 5 days. Great as a salad dressing, dumpling dip, noodle sauce, or marinade base.
