  • 1/2 cup graham cracker crumbles
  • 2 TBS granulated sugar
  • 1 tsp cinnamon
  • 1 stick salted butter, melted
  • 1 TBS finely chopped walnuts (optional)
  • Cheesecake Filling:
  • 2 packages Philadelphia cream cheese, softened
  • 14 oz can sweetened condensed milk
  • 1 TBS pure vanilla extract
  • 2 eggs
  • 2 TBS all-purpose flour
  • Cobbler Topping:
  • 1/2 cup all-purpose flour
  • 2 TBS granulated sugar
  • 2 TBS light brown sugar
  • 1 tsp cinnamon
  • 1/2 stick salted butter, melted
  • Peach Topping:
  • 3 TBS salted butter
  • 2 cups sliced peaches
  • 1 TBS cinnamon
  • 2 TBS light brown sugar
  • 1/4 cup granulated sugar
  • 1 tsp lemon juice
  • 1 tsp pure vanilla extract
  • 1 TBS cornstarch

Instructions

  1. Preheat the air fryer to 300°F.
  2. Mix graham cracker crumbles, sugar, cinnamon, melted butter, and walnuts for the crust. Press into a springform pan and chill.
  3. In a bowl, beat cream cheese until smooth. Add sweetened condensed milk, vanilla, eggs, and flour. Pour over the crust.
  4. In a saucepan, melt butter for the peach topping. Add sliced peaches, cinnamon, brown sugar, granulated sugar, lemon juice, and vanilla. Cook until peaches soften. Stir in cornstarch to thicken. Set aside.
  5. For the cobbler topping, mix flour, sugars, cinnamon, and melted butter until crumbly.
  6. Spoon half the peach topping over the cheesecake batter. Sprinkle cobbler topping evenly.
  7. Air fry for 35–40 minutes or until center is just set. Let cool, then chill for several hours.
  8. Top with remaining peach topping before serving.

Notes

Use fresh or frozen peaches as desired. Be sure to chill the cheesecake completely for best texture.
