Ingredients

- ½ peach – finely sliced
- 1 teaspoon honey
- 2–3 tablespoons ricotta
- Pinch of cinnamon
- 1 slice sourdough or bread of choice
- Pinch sea salt or flaky sea salt
- 1 teaspoon chopped mint (optional)
- 1 teaspoon bee pollen (optional)
Instructions
- Preheat air fryer to 350°F (175°C).
- Place the bread slice in the air fryer and toast for 3-4 minutes or until golden and crisp.
- Spread the ricotta over the warm toast.
- Top with peach slices and drizzle with honey.
- Sprinkle a pinch of cinnamon and sea salt.
- Garnish with chopped mint and bee pollen if using.
- Serve immediately and enjoy!
Notes
Try swapping peaches for nectarines or figs depending on season. Add crushed pistachios for extra crunch.
