Description

Golden, flaky turnovers bursting with fresh peaches and a hint of rosemary, all perfectly crisped in the air fryer.


Ingredients

Scale
  • 4 ripe peaches, stones removed, roughly chopped
  • 4 dates, stones removed, roughly chopped
  • 1 sprig fresh rosemary, leaves finely chopped
  • 2 tbsp caster sugar
  • 1 orange, grated zest and juice
  • Plain flour, for dusting
  • 500g block readymade puff pastry
  • 1 free-range egg, beaten
  • For the topping:
  • 4 tbsp icing sugar
  • ½ tsp finely chopped fresh rosemary leaves
  • ½ orange, juice only
  • 2 tbsp toasted almonds

Instructions

  1. In a bowl, mix chopped peaches, dates, rosemary, caster sugar, orange zest, and juice.
  2. Lightly dust a work surface with flour and roll out the puff pastry.
  3. Cut pastry into squares and spoon filling into the center of each.
  4. Brush edges with beaten egg and fold into triangles, pressing edges to seal.
  5. Brush tops with remaining egg and place in a preheated air fryer.
  6. Cook at 180°C for 10–12 minutes or until golden and puffed.
  7. Meanwhile, mix icing sugar, rosemary, and orange juice to make the glaze.
  8. Drizzle glaze over warm turnovers and sprinkle with toasted almonds before serving.

Notes

Best enjoyed warm. You can prepare the filling in advance and refrigerate for quick assembly.
