Description
Golden, flaky turnovers bursting with fresh peaches and a hint of rosemary, all perfectly crisped in the air fryer.
Ingredients

- 4 ripe peaches, stones removed, roughly chopped
- 4 dates, stones removed, roughly chopped
- 1 sprig fresh rosemary, leaves finely chopped
- 2 tbsp caster sugar
- 1 orange, grated zest and juice
- Plain flour, for dusting
- 500g block readymade puff pastry
- 1 free-range egg, beaten
- For the topping:
- 4 tbsp icing sugar
- ½ tsp finely chopped fresh rosemary leaves
- ½ orange, juice only
- 2 tbsp toasted almonds
Instructions
- In a bowl, mix chopped peaches, dates, rosemary, caster sugar, orange zest, and juice.
- Lightly dust a work surface with flour and roll out the puff pastry.
- Cut pastry into squares and spoon filling into the center of each.
- Brush edges with beaten egg and fold into triangles, pressing edges to seal.
- Brush tops with remaining egg and place in a preheated air fryer.
- Cook at 180°C for 10–12 minutes or until golden and puffed.
- Meanwhile, mix icing sugar, rosemary, and orange juice to make the glaze.
- Drizzle glaze over warm turnovers and sprinkle with toasted almonds before serving.
Notes
Best enjoyed warm. You can prepare the filling in advance and refrigerate for quick assembly.
