Instructions
- Preheat oven to 375°F. Line three baking sheets with parchment paper.
- In medium bowl, whisk together flour, baking soda, and baking powder. Set aside.
- In stand mixer, cream butter and sugar until light and fluffy (3 minutes). Beat in egg and vanilla.
- Alternate adding dry ingredients with buttermilk, mixing just until combined.
- Drop dough by tablespoons onto prepared sheets, spacing 2″ apart. Bake 10-12 minutes until edges just start turning golden. Cool completely.
- Filling: Beat cream cheese and butter until smooth. Gradually add powdered sugar, vanilla, and salt. Whip until fluffy.
- Pair similar-sized cookies. Pipe or spread filling on flat side of one cookie, then sandwich with another. Repeat.
- Refrigerate 30 minutes to set before serving. Store refrigerated in airtight container.
