Moist and sweet, this Amish zucchini bread with pineapple and walnuts is a wholesome treat perfect for breakfast or snack time.


Ingredients

  • 1 c. oil (canola or vegetable)
  • 1 ½ c. sugar
  • 3 large eggs
  • 2 tsp. vanilla extract
  • 2 c. zucchini, unpeeled and grated
  • 3 ½ c. all-purpose flour
  • 1 ¼ tsp. salt
  • 1 ½ tsp. baking soda
  • ¾ tsp. baking powder
  • 1 c. crushed pineapple, drained
  • 1 c. walnuts, chopped

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, whisk together oil, sugar, eggs, and vanilla extract.
  3. Stir in grated zucchini and crushed pineapple.
  4. In a separate bowl, combine flour, salt, baking soda, and baking powder.
  5. Gradually add dry ingredients to the wet mixture and mix until just combined.
  6. Fold in chopped walnuts.
  7. Pour batter into greased loaf pans.
  8. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
  9. Let bread cool in the pans for 10 minutes before transferring to wire racks to cool completely.

Notes

You can freeze the loaves for up to 3 months. Make sure they are completely cooled before wrapping.
