Description
Moist and sweet, this Amish zucchini bread with pineapple and walnuts is a wholesome treat perfect for breakfast or snack time.
Ingredients

- 1 c. oil (canola or vegetable)
- 1 ½ c. sugar
- 3 large eggs
- 2 tsp. vanilla extract
- 2 c. zucchini, unpeeled and grated
- 3 ½ c. all-purpose flour
- 1 ¼ tsp. salt
- 1 ½ tsp. baking soda
- ¾ tsp. baking powder
- 1 c. crushed pineapple, drained
- 1 c. walnuts, chopped
Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, whisk together oil, sugar, eggs, and vanilla extract.
- Stir in grated zucchini and crushed pineapple.
- In a separate bowl, combine flour, salt, baking soda, and baking powder.
- Gradually add dry ingredients to the wet mixture and mix until just combined.
- Fold in chopped walnuts.
- Pour batter into greased loaf pans.
- Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
- Let bread cool in the pans for 10 minutes before transferring to wire racks to cool completely.
Notes
You can freeze the loaves for up to 3 months. Make sure they are completely cooled before wrapping.
