Description

A moist and fragrant apple almond cake with a soft crumb, perfect for teatime or dessert.


Ingredients

  • 2 apples, peeled and sliced
  • 150g almond flour
  • 100g all-purpose flour
  • 150g sugar
  • 3 eggs
  • 100ml vegetable oil
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • Pinch of salt
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat oven to 180°C (350°F). Grease and line a cake pan.
  2. In a bowl, beat eggs and sugar until light and fluffy.
  3. Add oil and vanilla extract, and mix well.
  4. In another bowl, whisk together almond flour, all-purpose flour, baking powder, cinnamon, and salt.
  5. Fold the dry ingredients into the wet mixture until combined.
  6. Gently fold in the sliced apples.
  7. Pour the batter into the prepared cake pan and spread evenly.
  8. Bake for 35–40 minutes or until a toothpick inserted comes out clean.
  9. Let cool before dusting with powdered sugar and serving.

Notes

Best served slightly warm. You can also add slivered almonds on top before baking for added crunch.
