- 1 1/2 pounds ground beef
- 1/2 pound ground pork
- 1 apple, peeled and finely diced
- 1/2 cup cooked bacon, chopped
- 1/2 cup onion, finely chopped
- 1/2 cup breadcrumbs
- 1/4 cup milk
- 2 large eggs
- 1 tablespoon Dijon mustard
- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried thyme
- 1/2 cup ketchup
- 2 tablespoons brown sugar
- 1 teaspoon apple cider vinegar
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment or lightly grease a loaf pan.
- In a large bowl, combine ground beef, ground pork, diced apple, chopped bacon, onion, breadcrumbs, milk, eggs, Dijon mustard, Worcestershire sauce, salt, pepper, and thyme. Mix gently until just combined.
- Shape the mixture into a loaf on the prepared baking sheet or press into loaf pan.
- In a small bowl, whisk together ketchup, brown sugar, and apple cider vinegar to make the glaze.
- Spread half the glaze over the meatloaf.
- Bake for 45 minutes, then spread the remaining glaze on top.
- Return to oven and bake for another 15 minutes, or until internal temperature reaches 160°F (70°C).
- Let rest for 10 minutes before slicing and serving.
Notes
Use a sweet apple like Fuji or Honeycrisp for best flavor. This meatloaf pairs perfectly with mashed potatoes or roasted carrots.
