  • 1 1/2 pounds ground beef
  • 1/2 pound ground pork
  • 1 apple, peeled and finely diced
  • 1/2 cup cooked bacon, chopped
  • 1/2 cup onion, finely chopped
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 2 large eggs
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1/2 cup ketchup
  • 2 tablespoons brown sugar
  • 1 teaspoon apple cider vinegar

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment or lightly grease a loaf pan.
  2. In a large bowl, combine ground beef, ground pork, diced apple, chopped bacon, onion, breadcrumbs, milk, eggs, Dijon mustard, Worcestershire sauce, salt, pepper, and thyme. Mix gently until just combined.
  3. Shape the mixture into a loaf on the prepared baking sheet or press into loaf pan.
  4. In a small bowl, whisk together ketchup, brown sugar, and apple cider vinegar to make the glaze.
  5. Spread half the glaze over the meatloaf.
  6. Bake for 45 minutes, then spread the remaining glaze on top.
  7. Return to oven and bake for another 15 minutes, or until internal temperature reaches 160°F (70°C).
  8. Let rest for 10 minutes before slicing and serving.

Notes

Use a sweet apple like Fuji or Honeycrisp for best flavor. This meatloaf pairs perfectly with mashed potatoes or roasted carrots.
