Ingredients

- 6 cups fresh baby spinach
- 2 medium apples, thinly sliced
- 6 slices bacon, cooked and crumbled
- 1/2 cup pecans, toasted
- 1/4 red onion, thinly sliced
- 1/2 cup feta cheese, crumbled
- 1/4 cup olive oil
- 2 tablespoons apple cider vinegar
- 1 tablespoon honey
- 1 teaspoon Dijon mustard
- Salt and black pepper to taste
Instructions
- In a large salad bowl, combine spinach, apple slices, red onion, bacon, pecans, and feta cheese.
- In a small bowl, whisk together olive oil, apple cider vinegar, honey, Dijon mustard, salt, and black pepper until well blended.
- Pour the dressing over the salad just before serving.
- Toss gently to combine and serve immediately.
Notes
Best served fresh. Toast pecans in a dry skillet for 3-4 minutes for extra flavor.
