Description

A refreshing apple spinach salad tossed with crispy bacon, toasted pecans, and a light vinaigrette for a perfect balance of sweet, savory, and crunchy.


Ingredients

  • 6 cups fresh baby spinach
  • 2 medium apples, thinly sliced
  • 6 slices bacon, cooked and crumbled
  • 1/2 cup pecans, toasted
  • 1/4 red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • Salt and black pepper to taste

Instructions

  1. In a large salad bowl, combine spinach, apple slices, red onion, bacon, pecans, and feta cheese.
  2. In a small bowl, whisk together olive oil, apple cider vinegar, honey, Dijon mustard, salt, and black pepper until well blended.
  3. Pour the dressing over the salad just before serving.
  4. Toss gently to combine and serve immediately.

Notes

Best served fresh. Toast pecans in a dry skillet for 3-4 minutes for extra flavor.
