Description

These homemade egg bites are a delicious and convenient grab-and-go breakfast option. Inspired by popular coffee shop versions, they’re made with eggs, cottage cheese, and your choice of mix-ins like vegetables, meats, and cheeses. Perfect for meal prep, these bites are high in protein and can be customized to suit your taste.


Ingredients

  • 6 large eggs
  • ¾ cup whole milk cottage cheese
  • ¼ teaspoon sea salt
  • Freshly ground black pepper, to taste
  • 3 cups fresh spinach (about 3 ounces)
  • ½ cup diced roasted red bell pepper (about 1 pepper)
  • ½ cup chopped green onion (about 2 green onions)

Instructions

  • Preheat the oven to 350°F (175°C) and grease a nonstick muffin tin with olive oil or cooking spray.
  • In a blender, combine the eggs, cottage cheese, salt, and a few grinds of black pepper. Blend until smooth.
  • Place the spinach in a steamer basket over a pot with 1 inch of simmering water. Cover and steam for 1 minute until wilted. Transfer to a strainer and squeeze out excess water, then roughly chop.
  • In a medium bowl, mix the chopped spinach with the roasted red bell pepper and green onions. Set aside ¼ cup of this vegetable mixture.
  • Evenly distribute the remaining vegetable mixture among the muffin cups. Pour the egg mixture over the vegetables, filling each cup about ¾ full. Top with the reserved ¼ cup of vegetables.
  • Bake for 18 to 22 minutes, or until the eggs are set. Let the egg bites cool in the pan for 5 minutes before removing.

Notes

  • Feel free to customize these egg bites with your preferred mix-ins. Options include cooked bacon, diced ham, sautéed mushrooms, or different cheeses like cheddar or feta.
  • For storage, place cooled egg bites in an airtight container and refrigerate for up to 3 days. To reheat, microwave for about 15 seconds. They can also be frozen for up to 3 months; thaw overnight in the refrigerator before reheating.
