Ingredients

Scale
  • 6 large eggs
  • ½ cup cottage cheese (or Greek yogurt)
  • ¼ cup shredded cheese (cheddar, feta, etc.)
  • ¼ cup diced veggies (spinach, bell peppers, mushrooms)
  • 2 tbsp cooked bacon or ham (optional)
  • Salt & pepper to taste

Instructions

  1. Preheat oven to 300°F (150°C). Grease a muffin tin or silicone mold.
  2. Blend eggs + cottage cheese until smooth for a silky texture.
  3. Stir in add-ins (cheese, veggies, meat) and season with salt/pepper.
  4. Pour into molds, filling each ¾ full.
  5. Bake 20–25 mins until set but slightly jiggly in the center.
  6. Cool 5 mins, then remove with a butter knife.

Notes

  • Substitutions: Use cream cheese or milk instead of cottage cheese.
  • Freezing: Store in an airtight container for up to 2 months. Reheat in 30-second bursts.
