- ½ cup cottage cheese (or Greek yogurt)
- ¼ cup shredded cheese (cheddar, feta, etc.)
- ¼ cup diced veggies (spinach, bell peppers, mushrooms)
- 2 tbsp cooked bacon or ham (optional)
- Salt & pepper to taste
Instructions
- Preheat oven to 300°F (150°C). Grease a muffin tin or silicone mold.
- Blend eggs + cottage cheese until smooth for a silky texture.
- Stir in add-ins (cheese, veggies, meat) and season with salt/pepper.
- Pour into molds, filling each ¾ full.
- Bake 20–25 mins until set but slightly jiggly in the center.
- Cool 5 mins, then remove with a butter knife.
