Description
Tender chicken breasts stuffed with fresh asparagus, sun-dried tomatoes, and gooey mozzarella, seasoned to perfection and pan-seared to a golden finish.

- 4 Skinless boneless chicken breasts, about 1 1/2 lb
- 1 teaspoon Italian seasoning mix
- 1 teaspoon Garlic Powder
- 1 teaspoon Smoked Paprika
- Sea salt and pepper
- 12 Asparagus stalks, ends trimmed
- 1 ounce Sun-dried Tomatoes, chopped
- 4 slices Mozzarella Cheese
- 1 tablespoon Olive Oil
Instructions
- Preheat the oven to 375°F (190°C).
- Place chicken breasts on a flat surface. Season both sides with Italian seasoning, garlic powder, smoked paprika, salt, and pepper.
- Make a slit in each chicken breast to form a pocket, being careful not to cut all the way through.
- Stuff each pocket with 3 asparagus stalks, some chopped sun-dried tomatoes, and a slice of mozzarella.
- Seal with toothpicks if necessary.
- Heat olive oil in a large oven-safe skillet over medium-high heat.
- Sear chicken for 3-4 minutes per side until golden brown.
- Transfer skillet to the oven and bake for 15-20 minutes, or until chicken is fully cooked through.
- Remove from oven, let rest a few minutes, then serve warm.
Notes
Use fresh, firm asparagus and quality mozzarella for best results. Secure with toothpicks to prevent stuffing from falling out during cooking.
