Description

A vibrant fall salad combining crisp apples, smoky bacon, and sweet candied pecans over fresh spinach, drizzled with a tangy maple vinaigrette.


Ingredients

  • 6 cups baby spinach
  • 2 medium apples, thinly sliced
  • 6 slices bacon, cooked and crumbled
  • 1 cup candied pecans
  • 1/2 cup crumbled feta cheese
  • 1/4 red onion, thinly sliced
  • 3 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon maple syrup
  • 1 teaspoon Dijon mustard
  • Salt and pepper, to taste

Instructions

  1. In a small bowl, whisk together olive oil, apple cider vinegar, maple syrup, Dijon mustard, salt, and pepper to make the dressing.
  2. In a large salad bowl, add spinach, sliced apples, bacon, candied pecans, feta cheese, and red onion.
  3. Drizzle the dressing over the salad just before serving.
  4. Toss gently to combine and serve immediately.

Notes

For added crunch, use Honeycrisp or Fuji apples. The salad can be prepped ahead, but add dressing right before serving to keep it fresh.
