Description

A fresh and colorful chopped salad packed with crisp apples, pears, dried cranberries, candied pecans, and blue cheese, tossed in a sweet and tangy apple cider vinaigrette.


Ingredients

  • 6 cups chopped romaine lettuce
  • 1 apple, chopped
  • 1 pear, chopped
  • 1/2 cup dried cranberries
  • 1/2 cup candied pecans
  • 1/3 cup crumbled blue cheese
  • 1/4 cup red onion, finely diced
  • 1/2 cup bacon, cooked and crumbled (optional)
  • 1/3 cup apple cider vinegar
  • 1/4 cup olive oil
  • 2 tbsp honey
  • 1 tsp Dijon mustard
  • Salt and pepper, to taste

Instructions

  1. In a large salad bowl, add chopped romaine, apple, pear, cranberries, pecans, blue cheese, red onion, and bacon if using.
  2. In a small bowl or jar, whisk together apple cider vinegar, olive oil, honey, Dijon mustard, salt, and pepper until smooth.
  3. Pour the dressing over the salad just before serving.
  4. Toss gently to combine and serve immediately.

Notes

For extra flavor, chill the salad ingredients before tossing. Substitute goat cheese or feta for blue cheese if preferred.
