- 6 cups chopped romaine lettuce
- 1 apple, chopped
- 1 pear, chopped
- 1/2 cup dried cranberries
- 1/2 cup candied pecans
- 1/3 cup crumbled blue cheese
- 1/4 cup red onion, finely diced
- 1/2 cup bacon, cooked and crumbled (optional)
- 1/3 cup apple cider vinegar
- 1/4 cup olive oil
- 2 tbsp honey
- 1 tsp Dijon mustard
- Salt and pepper, to taste
Instructions
- In a large salad bowl, add chopped romaine, apple, pear, cranberries, pecans, blue cheese, red onion, and bacon if using.
- In a small bowl or jar, whisk together apple cider vinegar, olive oil, honey, Dijon mustard, salt, and pepper until smooth.
- Pour the dressing over the salad just before serving.
- Toss gently to combine and serve immediately.
Notes
For extra flavor, chill the salad ingredients before tossing. Substitute goat cheese or feta for blue cheese if preferred.
