Description

A crisp and refreshing autumn salad featuring earthy kale, sweet Honeycrisp apples, shaved fennel, crunchy walnuts, and creamy goat cheese, all tossed in a light vinaigrette.


Ingredients

Scale
  • 6 cups curly kale, chopped
  • 1 large Honeycrisp apple, thinly sliced
  • 1 small fennel bulb, thinly shaved
  • 1/2 cup goat cheese, crumbled
  • 1/3 cup walnuts, toasted
  • 2 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 1 tsp honey
  • 1 tsp Dijon mustard
  • Salt and freshly ground black pepper to taste

Instructions

  1. In a large bowl, massage chopped kale with a drizzle of olive oil until slightly softened.
  2. Add thinly sliced Honeycrisp apple and shaved fennel to the bowl.
  3. In a small jar, whisk together olive oil, apple cider vinegar, honey, Dijon mustard, salt, and pepper.
  4. Pour the dressing over the kale mixture and toss well to combine.
  5. Top with toasted walnuts and crumbled goat cheese.
  6. Serve immediately as a fresh autumn side dish or light main course.

Notes

For extra flavor, add dried cranberries or pomegranate seeds. Best served fresh, but can be stored (without dressing) for up to 1 day.
