Description
A crisp and refreshing autumn salad featuring earthy kale, sweet Honeycrisp apples, shaved fennel, crunchy walnuts, and creamy goat cheese, all tossed in a light vinaigrette.
Ingredients

- 6 cups curly kale, chopped
- 1 large Honeycrisp apple, thinly sliced
- 1 small fennel bulb, thinly shaved
- 1/2 cup goat cheese, crumbled
- 1/3 cup walnuts, toasted
- 2 tbsp olive oil
- 1 tbsp apple cider vinegar
- 1 tsp honey
- 1 tsp Dijon mustard
- Salt and freshly ground black pepper to taste
Instructions
- In a large bowl, massage chopped kale with a drizzle of olive oil until slightly softened.
- Add thinly sliced Honeycrisp apple and shaved fennel to the bowl.
- In a small jar, whisk together olive oil, apple cider vinegar, honey, Dijon mustard, salt, and pepper.
- Pour the dressing over the kale mixture and toss well to combine.
- Top with toasted walnuts and crumbled goat cheese.
- Serve immediately as a fresh autumn side dish or light main course.
Notes
For extra flavor, add dried cranberries or pomegranate seeds. Best served fresh, but can be stored (without dressing) for up to 1 day.
