- 6 bone-in, skin-on chicken thighs
- 1 cup barbecue sauce
- 2 large onions, sliced
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
Instructions
- Preheat the oven to 200°C.
- Place sliced onions in a baking dish and drizzle with olive oil.
- Season the onions lightly with salt and pepper.
- Arrange the chicken thighs over the onions.
- Season the chicken with salt, black pepper, smoked paprika, and garlic powder.
- Brush the chicken generously with barbecue sauce.
- Cover the dish with foil.
- Bake for 30 minutes.
- Remove the foil and brush with more barbecue sauce.
- Return to the oven and bake uncovered for 20–25 minutes.
- Serve hot with the saucy onions.
Notes
For extra caramelized onions, slice them thin and spread evenly under the chicken.
