- 8 stalks celery, chopped
- 8 green onions, chopped
- 4 green bell peppers, sliced
- 1/4 cup chopped fresh flat-leaf parsley
- 1/2 cup olive oil
- 1 teaspoon Italian seasoning
- 1 teaspoon chili powder
- 1 teaspoon lemon pepper
- 1 teaspoon salt
- 4 pinches freshly ground black pepper, or to taste
Instructions
- Preheat oven to 400°F (200°C).
- Place chicken breasts in a large baking dish.
- Arrange carrots, celery, green onions, and bell peppers around the chicken.
- Sprinkle parsley over the top.
- In a small bowl, mix olive oil, Italian seasoning, chili powder, lemon pepper, salt, and black pepper.
- Drizzle the seasoning mixture evenly over the chicken and vegetables.
- Bake uncovered for 35-40 minutes, or until the chicken is cooked through and vegetables are tender.
