- 1 can (14.75 oz) pink salmon, drained and flaked
- 1 cup breadcrumbs
- 2 eggs, beaten
- 1/2 cup milk
- 1/4 cup finely chopped onion
- 2 tablespoons chopped parsley
- 1 tablespoon lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon butter, melted
Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, combine flaked salmon, breadcrumbs, eggs, milk, onion, parsley, lemon juice, salt, and pepper.
- Mix well until fully combined.
- Transfer mixture into a greased loaf pan and smooth the top.
- Drizzle melted butter over the top.
- Bake for 40–45 minutes or until firm and lightly golden.
- Let rest for 5 minutes before slicing and serving.
Notes
Serve with a side of steamed vegetables or a light dill sauce. Great for leftovers and can be served cold.
