Description

A simple, hearty, and flavorful baked salmon loaf that’s perfect for a comforting dinner or meal prep.


Ingredients

  • 1 can (14.75 oz) pink salmon, drained and flaked
  • 1 cup breadcrumbs
  • 2 eggs, beaten
  • 1/2 cup milk
  • 1/4 cup finely chopped onion
  • 2 tablespoons chopped parsley
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon butter, melted

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine flaked salmon, breadcrumbs, eggs, milk, onion, parsley, lemon juice, salt, and pepper.
  3. Mix well until fully combined.
  4. Transfer mixture into a greased loaf pan and smooth the top.
  5. Drizzle melted butter over the top.
  6. Bake for 40–45 minutes or until firm and lightly golden.
  7. Let rest for 5 minutes before slicing and serving.

Notes

Serve with a side of steamed vegetables or a light dill sauce. Great for leftovers and can be served cold.
