- 1 lb jumbo shrimp, peeled and deveined
- 1 cup buttermilk (or 1 cup whole milk + 1 tbsp lemon juice, let sit 5 minutes)
- ¾ cup cornstarch (or substitute with potato or tapioca starch)
- 1 cup vegetable oil or any neutral oil
- ¾ tsp salt
- ¾ tsp garlic powder
- ½ tsp black pepper
- 1 green onion, finely chopped (for garnish)
- Bang Bang Sauce:
- ½ cup Japanese mayonnaise (or regular mayo)
- ¼ cup Thai sweet chili sauce
- 2 tbsp sriracha sauce (add more if you like it spicier)
Instructions
- In a bowl, combine shrimp with buttermilk and let marinate for 10–15 minutes.
- Drain the shrimp and coat them in a mix of cornstarch, salt, garlic powder, and black pepper.
- Heat oil in a skillet over medium-high heat.
- Fry the shrimp in batches until golden and crispy. Drain on paper towels.
- In a bowl, mix mayo, sweet chili sauce, and sriracha to make the Bang Bang Sauce.
- Toss the hot shrimp in the sauce or serve the sauce on the side.
- Garnish with chopped green onion and serve immediately.
Notes
For a lighter version, you can cook the shrimp in an air fryer or oven with a light spray of oil.
