Ingredients

  • 1 lb jumbo shrimp, peeled and deveined
  • 1 cup buttermilk (or 1 cup whole milk + 1 tbsp lemon juice, let sit 5 minutes)
  • ¾ cup cornstarch (or substitute with potato or tapioca starch)
  • 1 cup vegetable oil or any neutral oil
  • ¾ tsp salt
  • ¾ tsp garlic powder
  • ½ tsp black pepper
  • 1 green onion, finely chopped (for garnish)
  • Bang Bang Sauce:
  • ½ cup Japanese mayonnaise (or regular mayo)
  • ¼ cup Thai sweet chili sauce
  • 2 tbsp sriracha sauce (add more if you like it spicier)

Instructions

  1. In a bowl, combine shrimp with buttermilk and let marinate for 10–15 minutes.
  2. Drain the shrimp and coat them in a mix of cornstarch, salt, garlic powder, and black pepper.
  3. Heat oil in a skillet over medium-high heat.
  4. Fry the shrimp in batches until golden and crispy. Drain on paper towels.
  5. In a bowl, mix mayo, sweet chili sauce, and sriracha to make the Bang Bang Sauce.
  6. Toss the hot shrimp in the sauce or serve the sauce on the side.
  7. Garnish with chopped green onion and serve immediately.

Notes

For a lighter version, you can cook the shrimp in an air fryer or oven with a light spray of oil.
