Description

A tender and juicy meatloaf topped with smoky barbecue sauce, perfect for a hearty family dinner.


Ingredients

  • 2 lbs ground beef
  • 1 cup breadcrumbs
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 large eggs
  • 1/2 cup milk
  • 1/2 cup barbecue sauce (plus extra for topping)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp smoked paprika

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large mixing bowl, combine ground beef, breadcrumbs, onion, garlic, eggs, milk, barbecue sauce, salt, pepper, and smoked paprika.
  3. Mix until just combined, being careful not to overwork the meat.
  4. Shape the mixture into a loaf and place it on a baking sheet lined with parchment paper or in a loaf pan.
  5. Bake for 45 minutes.
  6. Remove from the oven and spread additional barbecue sauce evenly over the top.
  7. Return to the oven and bake for another 15 minutes, or until the internal temperature reaches 160°F (70°C).
  8. Let rest for 10 minutes before slicing and serving.

Notes

Serve with mashed potatoes or roasted vegetables. Leftovers make great sandwiches.
