A tender and juicy meatloaf topped with smoky barbecue sauce, perfect for a hearty family dinner.
Ingredients

- 2 lbs ground beef
- 1 cup breadcrumbs
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 large eggs
- 1/2 cup milk
- 1/2 cup barbecue sauce (plus extra for topping)
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp smoked paprika
Instructions
- Preheat oven to 375°F (190°C).
- In a large mixing bowl, combine ground beef, breadcrumbs, onion, garlic, eggs, milk, barbecue sauce, salt, pepper, and smoked paprika.
- Mix until just combined, being careful not to overwork the meat.
- Shape the mixture into a loaf and place it on a baking sheet lined with parchment paper or in a loaf pan.
- Bake for 45 minutes.
- Remove from the oven and spread additional barbecue sauce evenly over the top.
- Return to the oven and bake for another 15 minutes, or until the internal temperature reaches 160°F (70°C).
- Let rest for 10 minutes before slicing and serving.
Notes
Serve with mashed potatoes or roasted vegetables. Leftovers make great sandwiches.
