Ingredients

  • 1 lb ground beef
  • 1 medium onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 6 large eggs
  • 1 cup milk
  • 2 cups shredded cheddar cheese
  • 3 cups frozen hash browns
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 tablespoon olive oil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a skillet and cook ground beef until browned. Drain excess fat.
  3. Add onion, bell pepper, and garlic. Cook until softened.
  4. Spread hash browns evenly in a greased 9×13-inch baking dish.
  5. Top with beef mixture and sprinkle with half of the cheese.
  6. In a bowl, whisk eggs, milk, salt, pepper, paprika, and oregano.
  7. Pour egg mixture evenly over the casserole.
  8. Top with remaining cheese.
  9. Bake uncovered for 35-40 minutes, until eggs are set and top is golden.
  10. Let rest 5 minutes before serving.

Notes
