- 1 lb ground beef
- 1 medium onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 6 large eggs
- 1 cup milk
- 2 cups shredded cheddar cheese
- 3 cups frozen hash browns
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- 1 tablespoon olive oil
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a skillet and cook ground beef until browned. Drain excess fat.
- Add onion, bell pepper, and garlic. Cook until softened.
- Spread hash browns evenly in a greased 9×13-inch baking dish.
- Top with beef mixture and sprinkle with half of the cheese.
- In a bowl, whisk eggs, milk, salt, pepper, paprika, and oregano.
- Pour egg mixture evenly over the casserole.
- Top with remaining cheese.
- Bake uncovered for 35-40 minutes, until eggs are set and top is golden.
- Let rest 5 minutes before serving.
Notes
