Description
This Beef Burrito Casserole is a cheesy, comforting bake loaded with seasoned ground beef, tortillas, beans, and melty cheese.

- 1 lb ground beef
- 1 packet taco seasoning
- 1 can (15 oz) refried beans
- 1 can (10 oz) enchilada sauce
- 1 cup salsa
- 6 flour tortillas
- 2 cups shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1/2 cup sour cream
- 2 green onions, chopped
- Cooking spray
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish with cooking spray.
- In a large skillet, cook ground beef over medium heat until browned. Drain excess fat.
- Stir in taco seasoning, refried beans, salsa, and half of the enchilada sauce. Mix well and simmer for 3-4 minutes.
- Spread a thin layer of the beef mixture in the bottom of the baking dish.
- Layer tortillas, beef mixture, and cheese, repeating until ingredients are used up, ending with cheese on top.
- Pour remaining enchilada sauce over the casserole and sprinkle with extra cheese.
- Bake uncovered for 20-25 minutes, until cheese is bubbly and golden.
- Remove from oven, let rest 5 minutes, then top with sour cream and green onions before serving.
Notes
You can substitute ground turkey or chicken for a lighter version. Add jalapeños for extra heat.
