- 2 lbs ground beef
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 1 carrot, grated
- 1 celery stalk, finely chopped
- 1 red bell pepper, finely chopped
- 2 tbsp Worcestershire sauce
- 1 cup fresh breadcrumbs
- 1/2 cup milk
- 2 large eggs
- 1/2 cup grated Parmesan cheese
- 2 tbsp ketchup
- 2 tbsp olive oil
- 1 tsp dried thyme
- 1 tsp salt
- 1/2 tsp black pepper
- For the glaze: 1/2 cup ketchup, 2 tbsp brown sugar, 1 tbsp Dijon mustard
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a pan, sauté onion, garlic, carrot, celery, and red bell pepper until softened.
- In a large bowl, mix ground beef, sautéed vegetables, Worcestershire sauce, breadcrumbs, milk, eggs, Parmesan, thyme, salt, and pepper until well combined.
- Shape mixture into a loaf and place in a greased loaf pan.
- Mix glaze ingredients (ketchup, brown sugar, Dijon mustard) and spread evenly over the top.
- Bake for 50–60 minutes, until cooked through and the glaze is caramelized.
- Let rest 10 minutes before slicing and serving.
Notes
For extra flavor, use a mix of ground beef and pork. Letting the meatloaf rest before slicing keeps it juicy.
