This Best Ever Gordon Ramsay Meatloaf is juicy, tender, and full of rich flavor with a savory glaze on top that makes it truly irresistible.


Ingredients

  • 2 lbs ground beef
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 1 carrot, grated
  • 1 celery stalk, finely chopped
  • 1 red bell pepper, finely chopped
  • 2 tbsp Worcestershire sauce
  • 1 cup fresh breadcrumbs
  • 1/2 cup milk
  • 2 large eggs
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp ketchup
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • For the glaze: 1/2 cup ketchup, 2 tbsp brown sugar, 1 tbsp Dijon mustard

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a pan, sauté onion, garlic, carrot, celery, and red bell pepper until softened.
  3. In a large bowl, mix ground beef, sautéed vegetables, Worcestershire sauce, breadcrumbs, milk, eggs, Parmesan, thyme, salt, and pepper until well combined.
  4. Shape mixture into a loaf and place in a greased loaf pan.
  5. Mix glaze ingredients (ketchup, brown sugar, Dijon mustard) and spread evenly over the top.
  6. Bake for 50–60 minutes, until cooked through and the glaze is caramelized.
  7. Let rest 10 minutes before slicing and serving.

Notes

For extra flavor, use a mix of ground beef and pork. Letting the meatloaf rest before slicing keeps it juicy.
