- 450g ground turkey
- 2 packs ramen noodles (discard seasoning)
- 2 tbsp sesame oil
- 3 cloves garlic, minced
- 1 inch ginger, grated
- 1 onion, finely chopped
- 4 cups chicken broth
- 3 tbsp soy sauce
- 2 tbsp hoisin sauce
- 1 tbsp rice vinegar
- 1 tbsp sriracha (optional, for spice)
- 2 cups baby spinach
- 2 boiled eggs, halved
- 2 green onions, sliced
- Sesame seeds, for garnish
Instructions
- Heat sesame oil in a large pot over medium heat. Add garlic, ginger, and onion, and sauté until fragrant.
- Add ground turkey and cook until browned, breaking it up with a spoon.
- Stir in soy sauce, hoisin sauce, rice vinegar, and sriracha (if using).
- Pour in chicken broth and bring to a simmer. Let cook for 10 minutes to develop flavor.
- Meanwhile, cook ramen noodles according to package directions, then drain.
- Add spinach to the broth and stir until wilted.
- Divide noodles into bowls, ladle broth and turkey mixture over them.
- Top with boiled eggs, green onions, and sesame seeds. Serve hot.
Notes
For extra richness, add a spoonful of miso paste or top with chili oil for a spicy kick.
