Description

A classic Southern comfort dish, this tomato pie is savory, cheesy, and layered with smoky bacon and fresh basil.


Ingredients

  • 1 1/2 lb. ripe red tomatoes, sliced a scant 1/4″ thick
  • Kosher salt
  • All-purpose flour, for dusting
  • 1 Easy Pie Crust (omit the sugar)
  • 6 thick-cut bacon slices, chopped
  • 1 small onion, finely chopped
  • 2 cloves garlic, finely chopped
  • 1 large egg
  • 1/2 cup mayonnaise
  • 1 Tbsp. Dijon mustard
  • 1 tsp. apple cider vinegar
  • 1 tsp. sweet paprika
  • Freshly ground black pepper
  • 6 oz. shredded sharp cheddar (about 2 1/2 cups)
  • 1 (4-oz.) jar chopped pimento peppers, drained
  • 2 Tbsp. chopped fresh basil leaves, plus more for serving

Instructions

  1. Sprinkle tomato slices with kosher salt and place on paper towels to drain for 30 minutes.
  2. Preheat oven to 375°F. Roll out pie crust on floured surface and fit into a 9-inch pie dish. Chill for 15 minutes.
  3. Blind bake the crust for 15 minutes. Let cool.
  4. In a skillet, cook bacon until crispy. Remove and drain. In the same skillet, sauté onion until soft, then add garlic and cook 1 minute more.
  5. In a bowl, whisk egg, mayonnaise, Dijon, vinegar, paprika, and black pepper.
  6. Layer tomatoes, bacon, onion mixture, cheddar, and pimentos in the crust. Pour the mayo mixture over the top. Sprinkle with chopped basil.
  7. Bake for 30–35 minutes until golden and bubbly. Let cool slightly before serving. Top with more fresh basil.

Notes

Use firm, ripe tomatoes for best results. Letting the pie rest after baking helps it set for cleaner slices.
