Ingredients

  • 2 cups dried black beans (soaked overnight)
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 red bell pepper, chopped
  • 6 cups vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1 bay leaf
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • Juice of 1 lime
  • Fresh cilantro, for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Sauté onion, garlic, carrots, celery, and bell pepper until softened.
  3. Add cumin, smoked paprika, and stir for 1 minute.
  4. Stir in soaked black beans, vegetable broth, and bay leaf.
  5. Bring to a boil, then reduce heat and simmer for 1–1.5 hours until beans are tender.
  6. Remove bay leaf and season with salt, pepper, and lime juice.
  7. For a creamier texture, blend part of the soup and return to pot.
  8. Serve hot, garnished with fresh cilantro.

Notes

Soaking beans overnight helps reduce cooking time. This soup pairs well with crusty bread or rice.
