- 2 cups dried black beans (soaked overnight)
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 red bell pepper, chopped
- 6 cups vegetable broth
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 1 bay leaf
- Salt and black pepper to taste
- 2 tablespoons olive oil
- Juice of 1 lime
- Fresh cilantro, for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Sauté onion, garlic, carrots, celery, and bell pepper until softened.
- Add cumin, smoked paprika, and stir for 1 minute.
- Stir in soaked black beans, vegetable broth, and bay leaf.
- Bring to a boil, then reduce heat and simmer for 1–1.5 hours until beans are tender.
- Remove bay leaf and season with salt, pepper, and lime juice.
- For a creamier texture, blend part of the soup and return to pot.
- Serve hot, garnished with fresh cilantro.
Notes
Soaking beans overnight helps reduce cooking time. This soup pairs well with crusty bread or rice.
