Ingredients

  • 2 tablespoon sesame oil
  • 2 tablespoon vegetable oil
  • 4 cups cooked rice cooled
  • 3 tablespoon soy sauce
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 3 eggs lightly beaten
  • 1 cup frozen peas and diced carrots blend

Instructions

  1. Heat sesame oil and vegetable oil in a large skillet or on a griddle over medium-high heat.
  2. Add the rice and stir-fry for 2-3 minutes, until heated through.
  3. Push the rice to one side of the skillet and pour in the beaten eggs. Scramble the eggs until cooked, then mix them with the rice.
  4. Add soy sauce, salt, and pepper. Stir to combine.
  5. Add the frozen peas and carrots and stir-fry for another 1-2 minutes, until heated through.
  6. Serve hot.

Notes

For a spicier kick, add a dash of sriracha! You can substitute chicken, shrimp, or tofu for the eggs. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
