- 2 tablespoon sesame oil
- 2 tablespoon vegetable oil
- 4 cups cooked rice cooled
- 3 tablespoon soy sauce
- 1 teaspoon salt
- 1 teaspoon pepper
- 3 eggs lightly beaten
- 1 cup frozen peas and diced carrots blend
Instructions
- Heat sesame oil and vegetable oil in a large skillet or on a griddle over medium-high heat.
- Add the rice and stir-fry for 2-3 minutes, until heated through.
- Push the rice to one side of the skillet and pour in the beaten eggs. Scramble the eggs until cooked, then mix them with the rice.
- Add soy sauce, salt, and pepper. Stir to combine.
- Add the frozen peas and carrots and stir-fry for another 1-2 minutes, until heated through.
- Serve hot.
Notes
For a spicier kick, add a dash of sriracha! You can substitute chicken, shrimp, or tofu for the eggs. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
