- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 4 cloves fresh garlic, minced
- 1 cup grated Parmesan cheese
- 2 tbsp extra virgin olive oil
- 2 tsp dried Italian herbs (oregano and basil)
- Salt and pepper to taste
Instructions
- Pat chicken breasts dry and season both sides with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken and sear 5-6 minutes per side until golden brown.
- Reduce heat to medium, sprinkle minced garlic and dried herbs over the chicken.
- Cook another 2 minutes, then flip the chicken.
- Generously sprinkle grated Parmesan cheese over each breast.
- Cover the skillet and let cheese melt for 2-3 minutes.
- Remove from heat, let rest 5 minutes, then slice and serve.
Notes
For a lighter version, use half the cheese and add a splash of lemon juice. Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat gently in a skillet or microwave.
