Description

Ingredients

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 1 cup grated Parmesan cheese
  • 2 tbsp extra virgin olive oil
  • 2 tsp dried Italian herbs (oregano and basil)
  • Salt and pepper to taste

Instructions

  1. Pat chicken breasts dry and season both sides with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add chicken and sear 5-6 minutes per side until golden brown.
  4. Reduce heat to medium, sprinkle minced garlic and dried herbs over the chicken.
  5. Cook another 2 minutes, then flip the chicken.
  6. Generously sprinkle grated Parmesan cheese over each breast.
  7. Cover the skillet and let cheese melt for 2-3 minutes.
  8. Remove from heat, let rest 5 minutes, then slice and serve.

Notes

For a lighter version, use half the cheese and add a splash of lemon juice. Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat gently in a skillet or microwave.
