  • 1 banana shallot, peeled and finely chopped (or use Β½ small onion)
  • 1 clove minced garlic
  • 150 ml (Β½ cup + 2 tbsp) double (heavy) cream
  • 125 g (4Β½ oz) Stilton, crumbled or roughly chopped (use Gorgonzola for a milder cheese)
  • 1 tbsp Worcestershire sauce
  • ΒΌ tsp black pepper

Instructions

  1. Melt butter in a saucepan over medium heat. Add shallots and cook for 3-4 minutes until softened.
  2. Add garlic and cook for 30 seconds until fragrant.
  3. Pour in the cream and bring to a gentle simmer.
  4. Reduce heat to low and gradually stir in the blue cheese until melted and smooth.
  5. Add Worcestershire sauce and black pepper, stirring to combine.
  6. Simmer for 2-3 minutes until the sauce thickens slightly. If too thick, add a splash of milk or cream.
  7. Remove from heat and serve immediately over your favorite dishes.

Notes

Tips: For extra smoothness, blend the sauce with an immersion blender. Substitutions: Use any blue cheese variety based on your preference – milder Gorgonzola or sharper Roquefort.
