Ingredients
- 2 tbsp unsalted butter
- 1 banana shallot, peeled and finely chopped (or use Β½ small onion)
- 1 clove minced garlic
- 150 ml (Β½ cup + 2 tbsp) double (heavy) cream
- 125 g (4Β½ oz) Stilton, crumbled or roughly chopped (use Gorgonzola for a milder cheese)
- 1 tbsp Worcestershire sauce
- ΒΌ tsp black pepper
Instructions
- Melt butter in a saucepan over medium heat. Add shallots and cook for 3-4 minutes until softened.
- Add garlic and cook for 30 seconds until fragrant.
- Pour in the cream and bring to a gentle simmer.
- Reduce heat to low and gradually stir in the blue cheese until melted and smooth.
- Add Worcestershire sauce and black pepper, stirring to combine.
- Simmer for 2-3 minutes until the sauce thickens slightly. If too thick, add a splash of milk or cream.
- Remove from heat and serve immediately over your favorite dishes.

Tips: For extra smoothness, blend the sauce with an immersion blender. Substitutions: Use any blue cheese variety based on your preference – milder Gorgonzola or sharper Roquefort.
