Ingredients

  • 8 bone-in, skin-on chicken thighs
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup crushed tomatoes
  • 1 tablespoon tomato paste
  • 1 bay leaf

Instructions

  1. Season the chicken thighs with salt, pepper, paprika, and thyme.
  2. Heat olive oil in a large pot or Dutch oven over medium-high heat.
  3. Sear the chicken thighs skin-side down until golden brown.
  4. Remove the chicken and set aside.
  5. Add chopped onion to the pot and cook until softened.
  6. Add minced garlic and cook until fragrant.
  7. Stir in tomato paste and cook for 1 minute.
  8. Add crushed tomatoes, chicken broth, and bay leaf.
  9. Return the chicken thighs to the pot.
  10. Cover and simmer on low heat for 35-40 minutes until the chicken is tender.
  11. Remove bay leaf and serve hot with the sauce.

Notes

Keep the heat low while braising to ensure tender, juicy chicken thighs.
