- 8 bone-in, skin-on chicken thighs
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- 1 tablespoon olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1/2 cup crushed tomatoes
- 1 tablespoon tomato paste
- 1 bay leaf
Instructions
- Season the chicken thighs with salt, pepper, paprika, and thyme.
- Heat olive oil in a large pot or Dutch oven over medium-high heat.
- Sear the chicken thighs skin-side down until golden brown.
- Remove the chicken and set aside.
- Add chopped onion to the pot and cook until softened.
- Add minced garlic and cook until fragrant.
- Stir in tomato paste and cook for 1 minute.
- Add crushed tomatoes, chicken broth, and bay leaf.
- Return the chicken thighs to the pot.
- Cover and simmer on low heat for 35-40 minutes until the chicken is tender.
- Remove bay leaf and serve hot with the sauce.
