Description

Juicy meatloaf smothered in rich brown gravy – the perfect comfort food classic for weeknight dinners or Sunday gatherings.


Ingredients

  • 2 lbs ground beef
  • 1 cup breadcrumbs
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 eggs
  • 1/2 cup milk
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon oil (for sautéing)
  • 2 cups beef broth
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • 1 tablespoon butter

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a pan, heat oil and sauté onion and garlic until translucent. Let cool slightly.
  3. In a large bowl, mix ground beef, sautéed onion and garlic, breadcrumbs, eggs, milk, Worcestershire sauce, salt, and pepper until just combined.
  4. Shape mixture into a loaf and place in a baking dish.
  5. Bake for 45-55 minutes or until internal temperature reaches 160°F (70°C).
  6. In a saucepan, bring beef broth and butter to a simmer.
  7. Mix cornstarch and water to make a slurry, then whisk into the broth.
  8. Cook until gravy thickens, about 2-3 minutes.
  9. Let meatloaf rest for 10 minutes, then slice and serve with gravy poured over the top.

Notes

Serve with mashed potatoes or roasted vegetables for a hearty meal. Don’t overmix the meat to keep the loaf tender.
