Description

Spicy, juicy buffalo turkey meatballs baked to perfection and tossed in tangy buffalo sauce – perfect for appetizers or a light dinner.


Ingredients

  • 1 lb ground turkey
  • 1/2 cup breadcrumbs
  • 1 egg
  • 2 cloves garlic, minced
  • 1/4 cup green onions, finely chopped
  • 1/2 tsp onion powder
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil
  • 1/2 cup buffalo wing sauce
  • 2 tbsp unsalted butter, melted
  • Celery sticks, for serving
  • Ranch or blue cheese dressing, for dipping

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a bowl, combine ground turkey, breadcrumbs, egg, garlic, green onions, onion powder, paprika, salt, and pepper. Mix until just combined.
  3. Form mixture into small meatballs (about 1 1/2 inches) and place on the baking sheet.
  4. Brush meatballs lightly with olive oil.
  5. Bake for 15-18 minutes, or until fully cooked and golden brown.
  6. Meanwhile, whisk together buffalo sauce and melted butter in a large bowl.
  7. Toss baked meatballs in the buffalo sauce until coated evenly.
  8. Serve warm with celery sticks and ranch or blue cheese dressing.

Notes

For extra heat, add a pinch of cayenne pepper to the meatball mixture or use an extra-spicy buffalo sauce.
