- 2 boneless, skinless chicken breasts
- 2 tablespoons Cajun seasoning
- 1 tablespoon olive oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 250g penne pasta, cooked
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Season chicken breasts with Cajun seasoning on both sides.
- Heat olive oil in a skillet over medium heat and cook chicken until golden and cooked through. Remove and slice.
- In the same skillet, sauté bell peppers and garlic until tender.
- Add heavy cream and chicken broth, stirring to combine.
- Mix in Parmesan cheese and let it simmer until the sauce thickens.
- Add cooked pasta to the sauce and toss well to coat.
- Top with sliced chicken and garnish with fresh parsley before serving.
Notes
Adjust the spice level by increasing or decreasing the Cajun seasoning. Add a squeeze of lemon for a zesty kick.
