Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon olive oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 250g penne pasta, cooked
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season chicken breasts with Cajun seasoning on both sides.
  2. Heat olive oil in a skillet over medium heat and cook chicken until golden and cooked through. Remove and slice.
  3. In the same skillet, sauté bell peppers and garlic until tender.
  4. Add heavy cream and chicken broth, stirring to combine.
  5. Mix in Parmesan cheese and let it simmer until the sauce thickens.
  6. Add cooked pasta to the sauce and toss well to coat.
  7. Top with sliced chicken and garnish with fresh parsley before serving.

Notes

Adjust the spice level by increasing or decreasing the Cajun seasoning. Add a squeeze of lemon for a zesty kick.
