Description
A hearty Cajun-inspired jambalaya packed with smoky turkey, spicy sausage, vegetables, and rice simmered in bold Creole flavors.

- 2 tablespoons olive oil
- 1 pound cooked turkey breast, diced
- 8 ounces andouille sausage, sliced
- 1 onion, chopped
- 1 green bell pepper, chopped
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 2 cups chicken or turkey broth
- 1 1/2 cups long grain rice
- 2 teaspoons Cajun seasoning
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper (optional)
- 1 bay leaf
- Salt and black pepper, to taste
- 2 green onions, sliced (for garnish)
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat.
- Add onion, bell pepper, celery, and garlic. Sauté until softened.
- Stir in sausage and cook until browned.
- Add diced turkey, Cajun seasoning, smoked paprika, cayenne, salt, and pepper. Stir well.
- Mix in diced tomatoes, broth, rice, and bay leaf. Bring to a boil.
- Reduce heat to low, cover, and simmer for 20-25 minutes, until rice is tender and liquid is absorbed.
- Remove bay leaf and fluff the rice with a fork.
- Garnish with green onions and parsley before serving.
Notes
Adjust spice levels by reducing or increasing cayenne pepper. Leftovers reheat well and taste even better the next day.
