Description

A hearty Cajun-inspired jambalaya packed with smoky turkey, spicy sausage, vegetables, and rice simmered in bold Creole flavors.


Ingredients

  • 2 tablespoons olive oil
  • 1 pound cooked turkey breast, diced
  • 8 ounces andouille sausage, sliced
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups chicken or turkey broth
  • 1 1/2 cups long grain rice
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper (optional)
  • 1 bay leaf
  • Salt and black pepper, to taste
  • 2 green onions, sliced (for garnish)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add onion, bell pepper, celery, and garlic. Sauté until softened.
  3. Stir in sausage and cook until browned.
  4. Add diced turkey, Cajun seasoning, smoked paprika, cayenne, salt, and pepper. Stir well.
  5. Mix in diced tomatoes, broth, rice, and bay leaf. Bring to a boil.
  6. Reduce heat to low, cover, and simmer for 20-25 minutes, until rice is tender and liquid is absorbed.
  7. Remove bay leaf and fluff the rice with a fork.
  8. Garnish with green onions and parsley before serving.

Notes

Adjust spice levels by reducing or increasing cayenne pepper. Leftovers reheat well and taste even better the next day.
