For the Crust:
- 2 ½ cups all-purpose flour
- 1 tsp salt
- 1 cup (2 sticks) unsalted butter, chilled and cubed
- 6–8 tbsp ice water
For the Filling:
- 6 cups thinly sliced apples (Granny Smith + Honeycrisp mix)
- ¾ cup granulated sugar
- ¼ cup brown sugar
- 2 tbsp lemon juice
- 2 tsp ground cinnamon
- ¼ tsp nutmeg
- ¼ tsp salt
- 3 tbsp cornstarch
- 2 tbsp unsalted butter (for dotting)
For the Egg Wash:
- 1 egg + 1 tbsp water (whisked)
- 1 tbsp coarse sugar (optional)
Instructions
- Make the Crust:
- Mix flour and salt. Cut in butter until pea-sized crumbs form.
- Add ice water 1 tbsp at a time until dough comes together. Divide into two discs, chill 1 hour.
- Prep Filling:
- Toss apples with sugars, lemon juice, spices, salt, and cornstarch. Set aside.
- Assemble:
- Roll out one dough disc for the bottom crust. Fit into a 9-inch pie dish.
- Add filling, dot with butter. Roll out top crust, lattice or cover, and seal edges.
- Brush with egg wash, sprinkle sugar. Cut vents.
- Bake:
- Bake at 375°F (190°C) for 45-55 minutes until golden and bubbly. Cool 2 hours before slicing.

- Apple Tip: Use firm apples for texture.
- No Cornstarch? Substitute 2 tbsp flour or 1 tbsp tapioca starch.
