Ingredients

- 2 cups all-purpose flour
- 2 tablespoons sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups buttermilk
- 2 large eggs
- 1/4 cup unsalted butter, melted
- 1 teaspoon vanilla extract
- Butter or oil for cooking
Instructions
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- In another bowl, beat eggs and mix with buttermilk, melted butter, and vanilla extract.
- Gradually add wet ingredients to dry ingredients, stirring until just combined. Do not overmix.
- Heat a griddle or non-stick pan over medium heat and lightly grease with butter or oil.
- Pour 1/4 cup of batter onto the pan for each pancake.
- Cook until bubbles form on the surface and edges look set, about 2-3 minutes.
- Flip and cook for another 1-2 minutes until golden brown.
- Repeat with the remaining batter.
- Serve warm with syrup, butter, or your favorite toppings.
Notes
For extra fluffy pancakes, let the batter rest for 5-10 minutes before cooking.
