For the Crust:
- 1 ½ cups graham cracker crumbs
- ⅓ cup granulated sugar
- 6 tbsp melted butter
For the Filling:
- 24 oz (3 blocks) cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 tsp vanilla extract
- ½ cup sour cream
For the Topping:
- 2 tbsp melted butter
- ¼ cup granulated sugar
- 1 tbsp ground cinnamon
Instructions
- Preheat oven to 325°F (165°C). Grease a 9-inch springform pan.
- Make the crust: Mix graham crumbs, sugar, and melted butter. Press into the pan.
- Beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla and sour cream.
- Pour filling over crust. Bake 45–50 minutes until edges are set (center should jiggle slightly).
- Cool 1 hour, then refrigerate 4+ hours.
- Brush top with melted butter and dust with cinnamon sugar before serving.
