For the Crust:

  • 1 ½ cups graham cracker crumbs
  • ⅓ cup granulated sugar
  • 6 tbsp melted butter

For the Filling:

  • 24 oz (3 blocks) cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • ½ cup sour cream

For the Topping:

  • 2 tbsp melted butter
  • ¼ cup granulated sugar
  • 1 tbsp ground cinnamon

Instructions

  1. Preheat oven to 325°F (165°C). Grease a 9-inch springform pan.
  2. Make the crust: Mix graham crumbs, sugar, and melted butter. Press into the pan.
  3. Beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla and sour cream.
  4. Pour filling over crust. Bake 45–50 minutes until edges are set (center should jiggle slightly).
  5. Cool 1 hour, then refrigerate 4+ hours.
  6. Brush top with melted butter and dust with cinnamon sugar before serving.

  • Freeze leftovers wrapped in plastic + foil for up to 2 months.
