Description

A classic French dessert with a rich custard base and a crispy caramelized sugar topping.


Ingredients

Scale
  • 2 cups heavy cream
  • 4 egg yolks
  • 1/2 cup granulated sugar (plus extra for topping)
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 325°F (160°C).
  2. In a saucepan, heat the heavy cream over medium heat until it just begins to simmer. Remove from heat.
  3. In a bowl, whisk together egg yolks and sugar until pale and creamy.
  4. Slowly add the warm cream to the egg mixture, whisking constantly.
  5. Stir in vanilla extract.
  6. Strain the mixture through a fine-mesh sieve and divide into ramekins.
  7. Place ramekins in a baking dish and pour hot water into the dish until it reaches halfway up the sides of the ramekins.
  8. Bake for 30-35 minutes, or until set but still slightly jiggly in the center.
  9. Remove from the oven, let cool, then refrigerate for at least 2 hours.
  10. Before serving, sprinkle a thin layer of sugar on top and caramelize with a kitchen torch or broil until golden brown.

Notes

For best results, use a kitchen torch for caramelizing the sugar. Serve chilled.
