- 1 box vanilla cake mix (or your favorite homemade vanilla cake recipe)
- 1 1/2 cups whole milk ricotta cheese
- 1 cup mascarpone cheese
- 1 1/2 cups powdered sugar
- 1 tsp vanilla extract
- Zest of 1 orange
- 1/2 tsp cinnamon
- 1 cup mini chocolate chips
- 1/4 cup chopped pistachios (optional, for garnish)
- Powdered sugar (for dusting)
Instructions
- Bake vanilla cake according to package directions in two 8-inch round pans. Let cool completely.
- In a large bowl, beat ricotta, mascarpone, powdered sugar, vanilla, orange zest, and cinnamon until smooth.
- Fold in mini chocolate chips.
- Place one cake layer on a serving plate and spread with half the ricotta filling.
- Top with second cake layer and spread remaining filling on top.
- Sprinkle with pistachios and dust with powdered sugar before serving.
- Chill for at least 2 hours before slicing for best texture and flavor.
Notes
For extra flair, decorate the sides with crushed cannoli shells or pipe whipped cream rosettes around the edges.
