This Caramelized Onion Meatloaf is ultra moist, loaded with sweet and savory onion flavor, and topped with a rich glaze. A comforting, elevated twist on the classic meatloaf.

- 1 tablespoon olive oil
- 2 large onions, thinly sliced
- 1 teaspoon brown sugar
- 1/4 teaspoon salt
- 1 1/2 pounds ground beef
- 1/2 cup bread crumbs
- 1/4 cup milk
- 2 eggs
- 1 teaspoon Worcestershire sauce
- 1 teaspoon Dijon mustard
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup ketchup
- 2 tablespoons brown sugar (for glaze)
- 1 teaspoon apple cider vinegar (for glaze)
Instructions
- Heat olive oil in a skillet over medium heat. Add onions, brown sugar, and salt. Cook slowly, stirring often, until onions are golden and caramelized, about 20–25 minutes. Let cool slightly.
- Preheat oven to 350°F (175°C).
- In a large bowl, combine ground beef, bread crumbs, milk, eggs, Worcestershire sauce, Dijon mustard, garlic powder, thyme, salt, pepper, and caramelized onions (reserve 2 tablespoons for topping).
- Mix until just combined and form into a loaf shape in a greased loaf pan or baking sheet.
- In a small bowl, mix ketchup, brown sugar, and vinegar for the glaze. Spread half over the meatloaf.
- Bake for 45 minutes. Add remaining glaze and reserved onions on top, then bake an additional 15 minutes or until internal temperature reaches 160°F (70°C).
- Let rest 10 minutes before slicing and serving.
Notes
Caramelizing the onions low and slow is key to rich flavor. This meatloaf pairs perfectly with mashed potatoes or roasted vegetables.
