This carnitas‑style twist brings a juicy, buttery texture and rich gravy that pairs beautifully with potatoes or sandwiches. Discover the ultimate comfort food that will become a family favorite.

Ingredients

Scale
  • 1 (3.5–4 lb) corned beef brisket (fat trimmed if desired), spice packet included
  • 1 large yellow onion, sliced
  • 4 cloves garlic, smashed
  • 1 (12‑ounce) bottle stout or amber ale (or beef broth)
  • 1 cup water
  • 1 bay leaf
  • 1 teaspoon black peppercorns
  • 1 teaspoon smoked paprika
  • 3 tablespoons butter (for gravy)
  • 3 tablespoons all‑purpose flour (for gravy)
  • ¼ tablespoon leftover cooking broth or melted butter (for finishing)
  • Freshly ground black pepper, to taste

Instructions

  1. Trim excess fat from the brisket, then season with black peppercorns, smoked paprika, and the spice packet; place in a large pot.
  2. Add sliced onion, smashed garlic, bay leaf, stout (or broth), water, and bring to a simmer; cover and cook on low heat for 3–4 hours until meat is fork‑tender.
  3. Remove the brisket, let rest 10 minutes, then shred or cube it; reserve the cooking liquid.
  4. In a skillet, melt butter, whisk in flour to create a roux, cook 1 minute, then gradually whisk in reserved broth until thickened; season with pepper.
  5. Return the shredded beef to the skillet, toss to coat in the gravy, and cook over medium‑high heat until edges become crispy, about 5–7 minutes.
  6. Transfer to a serving dish, sprinkle additional black pepper, and optionally garnish with fresh herbs; serve hot with mashed potatoes or in sandwiches.

Notes

Tip: For a vegetarian version, substitute jackfruit or mushrooms. Store leftovers in an airtight container in the fridge for up to 3 days; reheat gently to retain crispness. Serve with crusty bread or over rice for a complete meal.
