Description

Cheesy Ground Beef Enchiladas are a comforting Mexican-inspired dish, packed with seasoned beef, smothered in enchilada sauce, and topped with plenty of melted cheese.


Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 can (10 oz) enchilada sauce
  • 8 flour tortillas
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 2 tbsp olive oil
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a skillet, add onion and garlic, and sauté until fragrant.
  3. Add ground beef and cook until browned. Drain excess fat.
  4. Stir in taco seasoning and half the enchilada sauce, simmer for 3 minutes.
  5. Spread a thin layer of enchilada sauce on the bottom of a baking dish.
  6. Fill each tortilla with beef mixture and a sprinkle of cheddar cheese, roll tightly.
  7. Place rolled tortillas seam-side down in the baking dish.
  8. Pour remaining enchilada sauce over the top and sprinkle with both cheeses.
  9. Bake for 20–25 minutes until cheese is bubbly and golden.
  10. Garnish with fresh cilantro before serving.

Notes

Serve with sour cream, salsa, or guacamole for extra flavor.
