Description
Cheesy Ground Beef Enchiladas are a comforting Mexican-inspired dish, packed with seasoned beef, smothered in enchilada sauce, and topped with plenty of melted cheese.

- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning
- 1 can (10 oz) enchilada sauce
- 8 flour tortillas
- 2 cups shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 2 tbsp olive oil
- Fresh cilantro, chopped (for garnish)
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a skillet, add onion and garlic, and sauté until fragrant.
- Add ground beef and cook until browned. Drain excess fat.
- Stir in taco seasoning and half the enchilada sauce, simmer for 3 minutes.
- Spread a thin layer of enchilada sauce on the bottom of a baking dish.
- Fill each tortilla with beef mixture and a sprinkle of cheddar cheese, roll tightly.
- Place rolled tortillas seam-side down in the baking dish.
- Pour remaining enchilada sauce over the top and sprinkle with both cheeses.
- Bake for 20–25 minutes until cheese is bubbly and golden.
- Garnish with fresh cilantro before serving.
Notes
Serve with sour cream, salsa, or guacamole for extra flavor.
