Description

This cheesy loaded meatloaf casserole is the ultimate comfort food dinner – packed with mashed potatoes, seasoned ground beef, cheddar cheese, and bacon.


Ingredients

  • 1 lb ground beef
  • 1/2 cup chopped onion
  • 1/2 cup seasoned breadcrumbs
  • 1 large egg
  • 2 tbsp ketchup
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 3 cups mashed potatoes
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup cooked and crumbled bacon
  • 2 tbsp chopped green onions (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, mix together ground beef, onion, breadcrumbs, egg, ketchup, salt, and pepper.
  3. Press meat mixture into the bottom of a greased 9×9-inch baking dish.
  4. Bake for 20–25 minutes or until meat is fully cooked.
  5. Remove from oven and spread mashed potatoes evenly over the meat layer.
  6. Top with shredded cheddar cheese and crumbled bacon.
  7. Return to oven and bake for another 10–15 minutes, or until cheese is melted and bubbly.
  8. Garnish with green onions if desired before serving.

Notes

You can use leftover mashed potatoes or instant for quicker prep. For extra flavor, mix a bit of garlic powder into the potatoes.
