Description
This cheesy loaded meatloaf casserole is the ultimate comfort food dinner – packed with mashed potatoes, seasoned ground beef, cheddar cheese, and bacon.

- 1 lb ground beef
- 1/2 cup chopped onion
- 1/2 cup seasoned breadcrumbs
- 1 large egg
- 2 tbsp ketchup
- 1/2 tsp salt
- 1/4 tsp black pepper
- 3 cups mashed potatoes
- 1 1/2 cups shredded cheddar cheese
- 1/2 cup cooked and crumbled bacon
- 2 tbsp chopped green onions (optional)
Instructions
- Preheat oven to 375°F (190°C).
- In a large bowl, mix together ground beef, onion, breadcrumbs, egg, ketchup, salt, and pepper.
- Press meat mixture into the bottom of a greased 9×9-inch baking dish.
- Bake for 20–25 minutes or until meat is fully cooked.
- Remove from oven and spread mashed potatoes evenly over the meat layer.
- Top with shredded cheddar cheese and crumbled bacon.
- Return to oven and bake for another 10–15 minutes, or until cheese is melted and bubbly.
- Garnish with green onions if desired before serving.
Notes
You can use leftover mashed potatoes or instant for quicker prep. For extra flavor, mix a bit of garlic powder into the potatoes.
