			- 1 lb ground beef
 - 1 cup long grain white rice
 - 1 small onion, diced
 - 2 cloves garlic, minced
 - 1 can (10 oz) diced tomatoes with green chilies
 - 2 1/2 cups beef broth
 - 1 tsp chili powder
 - 1/2 tsp cumin
 - Salt and pepper to taste
 - 1 1/2 cups shredded cheddar cheese
 - 1/2 cup queso dip (store-bought or homemade)
 - Fresh cilantro, chopped (optional)
 
Instructions
- In a large skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat if needed.
 - Add the diced onion and minced garlic, cooking until softened, about 2-3 minutes.
 - Stir in the rice, diced tomatoes with green chilies, beef broth, chili powder, cumin, salt, and pepper.
 - Bring to a boil, then reduce heat to low and cover. Simmer for 18-20 minutes, or until the rice is cooked through and liquid is absorbed.
 - Stir in the shredded cheddar cheese and queso dip until everything is melted and creamy.
 - Garnish with chopped cilantro if desired and serve hot.
 
Notes
