Description
Cheesy Taco Pasta Bake is a family-friendly comfort food combining seasoned ground beef, pasta, taco flavors, and plenty of melted cheese baked to perfection.

			- 12 oz pasta (penne or rotini)
 - 1 lb ground beef
 - 1 small onion, diced
 - 2 cloves garlic, minced
 - 1 packet taco seasoning
 - 1 can (14 oz) diced tomatoes with green chilies
 - 1 cup salsa
 - 1 cup sour cream
 - 2 cups shredded cheddar cheese
 - 1 cup shredded Monterey Jack cheese
 - 2 tbsp olive oil
 - Fresh cilantro, chopped (for garnish)
 
Instructions
- Preheat oven to 375°F (190°C).
 - Cook pasta according to package instructions until al dente. Drain and set aside.
 - Heat olive oil in a skillet, add onion and garlic, and sauté until fragrant.
 - Add ground beef and cook until browned. Drain excess fat.
 - Stir in taco seasoning, diced tomatoes, and salsa. Simmer for 5 minutes.
 - Add cooked pasta and sour cream, stirring to combine.
 - Transfer mixture to a greased baking dish.
 - Top with cheddar and Monterey Jack cheeses.
 - Bake for 20 minutes until cheese is melted and bubbly.
 - Garnish with fresh cilantro before serving.
