Ingredients

- 4 tablespoons chia seeds
- 1/4 cup rolled oats
- 1 teaspoon vanilla
- 1 cup non-dairy milk
- 1 cup coconut water
- 1 tablespoon lemon or lime juice
- 1 tablespoon maple syrup
- 1/4 cup coconut flakes
- 2–3 large peaches, sliced
- 2–3 sprigs mint, for garnish
Instructions
- In a bowl, combine chia seeds, rolled oats, vanilla, non-dairy milk, and coconut water.
- Stir in the lemon or lime juice and maple syrup.
- Mix well and let sit for at least 4 hours or overnight in the fridge to thicken.
- Once set, stir again and layer into serving glasses with sliced peaches and coconut flakes.
- Top with additional peach slices, coconut flakes, and a sprig of mint.
- Serve chilled and enjoy!
Notes
Use ripe, juicy peaches for the best flavor. This pudding can be prepped the night before for a quick, ready-to-go breakfast.
